♦ This additive-free sushi vinegar is made only with brewed vinegar, sugar, salt, and kelp stock. It is highly versatile and can be used as is in a vareity of vinegared dishes. In addition to making sushi, you can also pickle chopped vegetables by marinating them in it or mix it with ketchup to make a sauce for chilli shrimp.

♦ The traditional static fermentation method uses earthenware jars or wooden barrels, allowing for a slow fermentation process that is carefully monitored daily by skilled artisan brewers. This method gives a mellow, rounded acidity to the vinegar, resulting in a smooth texture and a rich depth of umami and aroma.

**Sediment may occur, but this does not affect the quality.
