♦ This pure rice vinegar is made from 100% Hinohikari rice grown in Fukuoka Prefecture. The rice is carefully brewed by the artisans of Shobunsu, a long-established vinegar company, using the traditional static fermentation method to create a mellow and refreshing taste.
♦ The traditional static fermentation method uses earthenware jars or wooden barrels, allowing for a slow fermentation process that is carefully monitored daily by skilled artisan brewers. This method gives a mellow, rounded acidity to the vinegar, resulting in a smooth texture and a rich depth of umami and aroma.
**Sediment may occur, but this does not affect the quality.
