Deba knife (出刃包丁) is a thick, heavy Japanese kitchen knife traditionally designed for butchering fish.
It is a sturdy knife with a thin profile and a very thick spine that tapers to a sharp, thin edge. This blade can cut through the thickest portions of meat while remaining sharp enough to fillet delicate fish. It can be used with various types of meat but should not be used on bones, as this risks chipping the blade.
