Sumiya Bunjiro Brewery Co., Ltd. is a renowned mirin brewer located in Hekinan City in the Mikawa region of southeastern Aichi Prefecture. Since its founding in 1910, the brewer has maintained the traditional brewing method that maximizes the inherent flavour of rice. Unlike inexpensive mirin-like seasonings, Sanshu Mikara Mirin is classified as hon mirin (genuine mirin) as it has always used only 3 ingredients – glutinous rice, koji (rice malt), and shochu (Japanese distilled hard liquor), without any liquid sweeteners or flavourings added.
