What is Somen?
Somen (素麺) are very thin, white Japanese noodles made from wheat flour, salt, and water, similar to angel hair pasta but typically served chilled with a dipping sauce (tsuyu) for a light, refreshing meal, especially in summer. They are delicate, quick to cook, and often served with condiments like green onions or ginger, though they can also be enjoyed hot in soups in winter.
♦ These hand-pulled somen noodles are made with carefully selected wheat flour using modern equipment combined with traditional Shimabara techniques. The noodles are characterized by their thin texture, smoothness and chewiness. Enjoy it throughout the year, chilled somen or stir-fried somen in the summer, or as nyumen (somen noodles in soup) in the winter.

Cooking Instructions (cold somen)
1. Boil approximately 1 liter of water for 100 g (2 bundles) of somen noodles, gently loosening the noodles as you add them.
2. When it comes to a boil again and is about to overflow, reduce the heat. Let it boil for about 1.5 to 2 minutes, being careful not to overcook.
3. Once boiled, quickly transfer the noodles to a colander and rinse them gently with cold water 3 to 4 times.
