♦Sasaki Nishijin Tokubetsu Junmai Sake is made from rice carefully polished to 50% and fermented at low temperature for a long period using Ginjo yeast developed in Kyoto. It is mild, refreshing and smooth, accompanied by a fruity aroma. It pairs well with a variety of savoury dishes, including beef and grilled fish. The head crown on the sake bottle is made of local Nishijin textile, Kinran.
♦Tasting Note
“A gentle fruity aroma with plum and green apple notes, which is not typical for a junmai sake, is achieved by a high polishing ratio and slow fermentation under a low temperature. While Nishijin Tokubetsu Junmai’s taste is not overly complex, it’s clean and dry with a mouthful feel, clean texture and a quick finish with a nice bitterness at the very end. The sake can be drunk at any temperature but for my taste, room temperature was the best.”- Sudigama Sake Blog
A few words about sake storage
Sake changes its color and flavor over time, especially when exposed to direct light and fluctuating temperatures. Therefore, the best way to store sake is in a dark and cool place. At Taste of Japan, we invested energy efficient cooling facilities to store our sake at below 3 °C for long term maturation.
