Kyubei Matsuya founded the sake brewing business in 1781 at Nakagyo-ku, Kyoto City. In 1880, in search of good quality water, the business moved to Fushimi which is around 10km away from central Kyoto. Fushimi has always been well known for the abundancy of high quality groundwater which includes the perfect amount of minerals for sake brewing. The original place where the company was founded is now converted into a museum open to the public.
The name “Kinshi” came from a mythical golden bird which helped to win a war in an ancient Japanese folklore.
