♦This limited edition Gold Medal winning sake is brewed using “Miyamanishiki” rice polished to 59%. “Asashibori” means “brewed in the morning”. It is fermented at low temperature over the winter, brewed with natural spring water from the mountains of Nagano. It has a refreshing taste and crisp mouthfeel. It is highly aromatic with a pleasant sweetness and a gorgeous scent. Best served chilled.

♦This is a “Nama Sake”, an unpasteurized fresh sake that used advanced filtration technology called “Ultrafiltration” to remove unwanted bacteria, yeasts and enzymes, without deteriorating the freshness and aromas of the sake. This type of sake can be stored under normal ambient temperature before opening. After opened, please keep this product refrigerated.

A few words about sake storage

Sake changes its color and flavor over time, especially when exposed to direct light and fluctuating temperatures. Therefore, the best way to store sake is in a dark and cool place. At Taste of Japan, we invested energy efficient cooling facilities to store our sake at below 3 °C for long term maturation.

“Keriyu Asashibori Junmai Ginjo Nama Genshu Sake is a delightful sake. I drank it slightly chilled (at 14 degrees). While this product is a nama, the typical nama characteristics are subtle, probably due to how fresh this bottle is from the brewery! Upon the first sip, a creamy texture envelops the palate, reminiscent of velvety Greek yogurt. This is accompanied by bright notes of blueberry and peaches. As the sake unfolds, subtle hints of almond emerge, adding depth to the sake. The finish is where this sake truly shines; an umami character lingers on the tongue, providing a satisfying depth while simultaneously maintaining a refreshing lightness that invites another sip. ♦Brewery backstory

Started in 1864 the Endo brewery was created to supply the lord of a powerful samurai clan called the Suzaka. Founder Tokusaburo Endo understood quality craftsmanship was essential for his sake and he had the philosophy of “delicious sake brewing.”  

This attitude has been passed down from generation to generation. Led by the current owner, Hidesaburo Endo, the brewery is one of the top sake producers in Nagano prefecture.

Interesting facts:

– Endo is famous for its advanced filter technology when making its sake.

– The brewery has won multiple awards, such as the 2004 international ‘Monde Selection’ competition with a gold medal.

– The Keriyu sake brand first became popular in Japan in the early days of online selling.

Known for its mountains, hot springs and beautiful architecture, Nagano prefecture is a hive of sake brewing activity. In fact, the prefecture has over 80 breweries, making it the prefecture with the second-highest number of breweries in the country.

 The ‘Roof of Japan’ as it’s called truly has a special climate that infuses sake brewed in the area with unique qualities. This includes the local Miyama nishiki sake rice and high-quality brewing water.
